
I've seen more food blogs with Meatless Meal posts, and recipe swaps recently than I can shake a stick at. While most carnivores aren't willing to give up meat completely, they are for budget or health reasons willing to give up a little meat, at least for one main meal, once a week. If you're already on that bandwagon or are flirting with the idea, then you may suddenly become out of ideas for meatless meals and need some inspiration. I've got something for ya!

In a meat eating family, you'll get lots of groans at the dinner table if you just sub tofu to your normal meaty meal. It helps when you offer new things they've never had, and use a recipe with lot of great flavor to help win your carnivores over to meatless meals. Jill's recipes let vegetables shine, they are put front and center in the dish. While many of her recipes do involve a significant list of ingredients, even a busy cook (well, lazy really) like me doesn't mind prepping a longer list of ingredients to end up with a remarkable veggie dish. Think of all that time you didn't spend marinating, trimming, cooking meat, and throw it all into a veggie or three.
There are plenty of veggie/grain recipes and veggie/meat substitute recipes and many other veggie side dish recipes that adapt easily to the addition of meat substitute to turn it into a main meal. This is not just a book for vegetarians! Most carnivores would do their health a favor by increasing the amount of vegetables consumed on a regular basis.
Jill's book will inspire you to bring flavors together with vegetables you may have never thought of. Any gardener, CSA member, or produce sale shopper will know that in summer squash is a plenty, and using up the bounty in a palatable way can be a challenge. Jill's Grilled Asian Squash is a perfect way to use up plenty of abundant squash in a tasty way.
The squash I scored from the one farmer who still brings produce to Sandy's Market in West Houston on Wednesdays.

They grilled up nice with ginger, tamari (soy sauce), sesame seed oil and herb marinade and are kicked up a notch with some of the best tasting onions I've ever had.
I think my favorite part of the book, (outside of the recipes) is Jill's reminder to support local farmers and go to the trouble of finding fresh produce by visiting a farmer's market or stopping at a roadside stand to pick up some fresh produce. Some of the most amazing fruit and vege I've tasted has come from back country road produce stands. I always make sure I have cash in my wallet on the way down to the farm or out to Austin for family visits so I can stop and buy something grown at a Texas farm. Even if your busy life can only get to a Farmer's market once a quarter, or shop at a produce stand on the annual trek to grandmas; make time for it. Not only is it a great family activity, and one of the best ways to introduce various types of produce to your family, but it's also an opportunity to get some really tasty food.Anyone trying to use up home garden or CSA share produce will surely find something new to delight the family with just as one more greens, or squash or eggplant dish is the last thing they want to see on the table. The recipes are organized by season combining produce that harvests around the same time.
This book would make a great gift to anyone you know who is trying to make vegetables a bigger part of their diet. When steamed veggies on the side (or worse, a can of peas and carrots dumped into tuna mac) is all the veggie you know, it's no wonder veggies don't hold a place of esteem in the weekly menu.
Jill reminds us to revere the fruits and veggies grown nearby and offers a plethora of recipes that make can make vegetables queen of the table.
Last week I blogged about two of Jill's recipes, and I've made a handful of others. All delicious. My favorite was the Mediterranean Bean and Herb salad. Tomatillo and Veggie rice salad was hubby's favorite. I don't know why but he's morally opposed to white beans. Give him a black one, red one, brown one, no problem. Ask him to eat a white bean and it's like I committed a heinous dinner crime. Mystery it is.

I have no imagination when it comes to veggies. Raw and with ranch are about the only way I eat them! Unfortunately, I don't eat enough so I'm hoping these recipes will get my kids and me to eat more veggies. My favorite is probably fresh corn on the cob with lots of butter (that's healthy, right?) I love to put corn on the grill while it's still in the husk. The corn tastes so sweet and is really juicy because the husk holds in the juices and doesn't dry it out.

I love eggplant. I have tried a few eggplant recipes and they turned ok... good enough for me to enjoy, but my husband still won't eat it. Usually when I am eating out I do like to try any eggplant dishes that seem out of the ordinary.
My 2-yr old daughter is turning out to be a vegetarian of sorts... she will usually eat her veggies but no meat... eggplant isn't something she have tried yet, but I hope she does so I can start making it again...LOL

Corn, Tomato & Basil Salad. Just mix with Olive Oil, Red Wine Vinegar, Salt & Pepper. No worries about it spoiling in the sun. My 23mo old is a huge fan of tomatoes. I've always been a fan of broccoli. Veggies are my favorite!
My favorite veggie is butternut squash. I love to mash it and combine it with butter, salt, and pepper or combine it with alfredo sauce and serve it over fettecine. Delicious!

I know it's crazy, but lately it's been brussel sprouts! I roast them in some olive oil w/ a little kosher salt and sometimes I throw in some Mrs. Dash too. I prob over- roast them, but man are they good!! My all-time favorite would prob be acorn squash w/ butter and brown sugar.
Spring's first asparagus, blanched and topped with a poached egg and grated cheese.

I love cauliflower - especially the orange and purple varieties that are starting to show up at our local supermarkets. I typically cut it into bite sized pieces, spray with some olive oil and roast it in the oven. Simple and tastes great too.

My favorite veggie is zucchini. I love them because they can be cooked with just about anything from spaghetti sauce, to breads. I chop them up and add to a salad, grill them with onions, add them to spaghetti and lasanga and even in baking bread.

MY new favorite is Swiss Chard! Yum. I discovered this thanks to the CSA my family joined this year. They posted a recipe where you saute it with butter, raisins and pine nuts. Sooooo good. My son loves it too!

Believe it or not, right now I am hooked on Brussel Sprouts. My mom taught me this one... roast them in the oven with olive oil and garlic salt. They come out sweet and garlic-y. What could be better?
That said, I'd LOVE to win the cookbook because I can't get my kid to touch anything green.
I enjoy lots of veggies, but my favorite is probably yellow summer squash. I like it best boiled with onions then flavored with butter, salt, and pepper.

Oh...fresh asparagus! Put them in simmering water for just a minute or two and then into COLD water to stop the cooking. Heat a little olive oil and butter in pan and saute them for a minute or two. Add a squeeze of lemon and some salt and freshly ground pepper. YUM!

Asparagus - grilled!
My veggie of choice is EGGPLANT (the purple big fat ones). I peel, slice (fairly thick), soak in egg wash, dredge in breadcrumb mixture and bake. Then add cheese on top and melt. YUM-YUM.

One of my faves is SPINACH!! Mix one bag of frozen spinach with one chopped onion, one cup of parmesan cheese, one beaten egg, 1/4 cup oil and one package of stuffing mix. Shape into teaspoon sized balls, place on greased baking sheet. Bake at 350 for approx 10 mins or just until bottoms are lightly browned. Yummmmmmm! great Hors Douvres!

My favorite way to eat veggies is to chop up whatever kind I have on hand, brush them with a bit of olive oil, and put them on the grill. To me, any veggie tastes best when grilled or roasted.

I would have to say that my favorite vegetables are numerous. I love to make vegetable soup with crushed tomatoes, green onions, garlic, zucchini, kidney beans, carrots,celery, green cabbage, fresh parsley, green bell pepper, frozen peas, frozen corn along with added tomato sauce, vegetable broth, water and whole wheat macaroni. My favorites are peas and corn mixed up. But my 2 y.o. son does not like veggies - anything colorful is "too yucky" for him. Probably, it all my fault since I am not too much of veggie eater. I definitely need ideas/inspiration on how to make veggies not "yucky" for myself and my children. I am joking now that my second son who is about to be born in Nov. will get plate of veggies put in front of him each and every day since he is born (something I did not do with my first, and now regret it.

I love zucchini ... I love to fix it the following way:
Sesame Parmesan Zucchini
2 medium zucchini, quartered and cut into 1/2-inch slices
3 tablespoons olive oil
1/2 teaspoon sesame oil
4 teaspoons sesame seeds
4 tablespoons Parmesan cheese
1/2 teaspoon red pepper
1 teaspoon garlic powder
I throw all ingredients in a zip bag and shake to cover. Bake at 375 for 10 minutes... yummy

slice the scallions(aka green onions) and simmer in olive oil
grill corn on the cob with some husks still on it
remove from grill and pull the husks back and spoon on the oil and scallions.

did you know you can regrow your green onions in a cup of clean tap water. when cutting your green onions leave about 2 inches at the bottom and stick it into a cup a water and let it grow or just stick it into your garden or the ground and watch it grow. I've got about 8 green onions growing in my garden right now. Great if you don't use green onions that often.

I didn't see anybody mention cabbage--get the saute pan hot til the oil smokes, then add a tsp of mustard seed, cover and let pop for a minute. Add shredded cabbage and saute, sprinkle with chili powder. Yum!
